Speaker Bio:

Kathryn’s expertise centres on legislation and the technical aspects of the gluten-free diet. Kathryn has a key role in development of new publication and website content as well as guidance for the food industry. Having worked at Coeliac UK for the last ten years, Kathryn has built up a wealth of networks among UK manufacturers and caterers who are producing gluten-free. She has worked on research in to the conditions needed to deliver safe gluten-free options in commercial kitchens and has been instrumental in the development of Coeliac UK’s gluten-free accreditation scheme. Her background qualifications are in nutritional science, food policy and legislation.

Gluten-free: standards and consumer perspectives

Presentation Synopsis:

Coeliac UK is the UK national charity for people with coeliac disease, working to improve the lives of people with the condition. Coeliac disease is a lifelong autoimmune disease affecting roughly 1 in 100 people across Europe and currently the only treatment for the condition is a strict gluten-free diet for life. Whilst EU-wide labelling legislation has made it much easier for people to identify safe foods and gluten-free provision in restaurants is generally improving, maintaining standards and safety in gluten-free production is key to providing assurances for consumers. This talk will look at what consumers want and standards available for assuring gluten-free production in both catering and manufacturing environments.
